I’ve been messing around with mocktails & zero-proof drinks a lot more this year. I love a spirit forward drink, but sometimes it’s nice to skip out on the alcohol (& the hangover). Plus any time I host I always like to have an easy, yet intentional mocktail on hand to make everyone feel thought-of.
This smoked rosemary elderflower mocktail is bright, herbal, & beyond refreshing. It’s a perfect poolside drink, but ages well into those breezy summer nights. It’s quite simple which is a good switch up from a heavy lift hosting drink.
Creating A Smoked Rosemary Elderflower Mocktail
My favorite way to garnish these is with a small clothespin. Here is an option you can order online. My go-to champagne flutes are these. I also love the Estelle set from Anthro.
If you’d like to make the drink with alcohol, you can do a split ratio of lemon elderflower soda & champagne or prosecco. If you’re looking for something a bit stronger, I’d reach for vodka or gin. I have not tried this yet, but my initial thought would be to add 1.5 oz of your liquor of choice. You will have less room for the soda, so it may require a bit of added sweetness. My choice would be a plain simple syrup, or you could make a rosemary simple to start!
If you make it into a cocktail, I would serve it in a highball glass instead. These are the ones we own – they’re super durable, but still look high quality!

Smoked Rosemary Elderflower Mocktail
Ingredients
- 1 Sprig of Rosemary
- 1 Juiced Lemon
- 1 Elderflower Soda
Instructions
- Use a torch to light the rosemary. Once smoking, place it directly into a carafe of choice and cover tightly. Ensure the rosemary is not on fire when placed into the carafe, just smoking.
- Allow the rosemary to fill the carafe completely with smoke.
- While the rosemary is sitting, juice one lemon.
- Quickly add the lemon juice to the rosemary filled carafe & recover.
- Combine the juice and rosemary by lightly swirling the covered carafe. Allow them to sit, covered, for at least 2 minutes. Leave longer for a smokier drink.
- Pour 1/2 – 1oz. of the smoked juice into a champagne flute.
- Top with lemon elderflower soda.
- Garnish with a small sprig of freshly smoked rosemary.
