Description
This Old-Fashioned with Orange “Air” is a conversation starter of a drink! It’s lighter than foam with a delicious orange flavor that compliments the spirit-forward cocktail. If you love a classic Old-Fashioned, but want to add a fun twist – try this one out!
Ingredients

- 2 g – Soy Lecithin
- 300 g – Fresh Squeezed Orange Juice
- 2 oz – Whiskey or Brandy
- 3 dashes – Angostura or Orange Bitters
- 1/2 oz – Simple Syrup
Instructions
Make Orange “Air”
- Add fresh orange juice & soy lecithin powder to a wide and flat bottom dish.
- Using an immersion blender, blend the ingredients together until a stable “air”/foam forms. (See notes & FAQs if foam is not stabilizing.)
- Allow “air” to rest for 1-3 minutes to stabilize. Begin making your cocktail during this time.
Make Old-Fashioned Cocktail
- Add whiskey/brandy, bitters, simple syrup, & ice to a mixing glass.
- Stir with a bar spoon for 20-30 seconds.
- Use a Hawthorne strainer to strain your cocktail into a rocks glass over a large ice cube.
Assemble, Garnish, & Enjoy
- Using a bar spoon, gently scoop the “air” on top of your Old-Fashioned. Make sure you do this part gently, avoiding any orange juice/liquid to keep your “air” intact.
- Using a paring knife, lightly peel a slice of orange peel. Gently twist it to express the oils and run it along the rim of the glass.
- Garnish with the orange peel & enjoy!
Notes
- If you’re not seeing any progress with your soy lecithin “air”, you can slowly add more powder. Do this SLOWLY & in SMALL amounts, as too much will impact taste.
- If you’d like to enjoy the Old-Fashioned without the air/foam, simply skip that step & the cocktail recipe remains the same.
- The orange “air” will hold for a few hours (sometimes longer!)
- To make less “air” simply reduce the orange juice to 150g & soy lecithin to 1g. Always keep the ratio the same.
