There's just something so special about a drink with lavender in it. This lavender gin cocktail is one of our frequented recipes. We love to surprise guests by pulling out the whipped cream canister for the egg white foam! Whether you're serving guests or yourselves, this one is bound to make your favorites list!

Ingredients:
Cocktail Ingredients:
- 2.5 oz - Dry gin
- 1 oz - Lavender syrup*
- 1 oz - Fresh lemon juice
- Bar spoon - Ube powder
- Thyme (optional)
Lavender Syrup Ingredients:
- 1 cup - Water
- 1 cup - Granulated sugar
- 2 tbs - Dried lavender buds
Egg White Foam Ingredients:
- 4 oz - Egg whites (or 4 egg whites)
- 3 oz - Fresh lemon juice
- 3 oz - Simple syrup (1:1 ratio)

How-To Make A Lavender Gin Cocktail:
1. Make your egg white foam.
- Add egg whites, lemon juice, and simply syrup to a whipped cream canister. Shake lightly to combine & chill in the fridge for 30 minutes minimum.
2. Make your lavender syrup.
- Add water, sugar, and dried lavender buds (we get ours from World Market!) to a pot.
- Heat over low & simmer for 10 minutes.
- Strain lavender buds & set syrup aside to cool.

3. Prepare your egg white foam.
- Remove your canister from the fridge.
- Using a cream charger, charge your canister once. (Follow instructions for your canister, usually it's just screwing the charge into the end of the canister.)
- Shake for 10-15 seconds.
- Charge the canister a second time with a new charger.
4. Make your cocktail.
- Add gin, lavender syrup, lemon juice, ube powder, and ice to a boston shaker.
- Shake vigorously for 20 seconds.
- Using a Hawthorne strainer and mesh strainer, double strain the cocktail into a coupe glass.
- Shake your cream dispenser again and then dispense gently onto the top of your cocktail.
- Garnish with thyme & enjoy!

Recipe FAQs:
Does egg white foam taste like eggs?
No! If you've ever ordered a cocktail & it came with a little foam on top, there's a 99% chance you drank egg white foam. It tastes like whatever you put in it (in this case, simple syrup & lemon). It's delicious & completely safe to drink!

Can you skip or sub the egg white foam?
You can use a 1:1 sub of aquafaba (chickpea liquid) to make the drink dairy free. The drink it still good without a foam topping, but I highly reccomend trying the egg white foam if you're only reason for subbing it preference & not an allergy. Up to you!
What can you sub in place of lavender?
I wouldn't recommend skipping that step as it's a crucial part of the cocktail. You can buy a store-bought lavender syrup if needed though. It will taste a bit different, but it's still good.

What is a lavender gin cocktail called?
Some people call it a lavender gin sour or a lavender gin martini. There isn't a household name for the drink, really.
Cory & I visited one of our favorite hotels (The Claremont - worth a visit!) in Maine & that's where this drink was inspired for us. They had a similar one called The Lady Clare, so we use that name in our house!

How do you use a whipped cream dispenser?
This is one of those things that seems SO intimidating until you've done it. It's truly so simple. Here's how:
- Put whatever you want inside the canister. You need a binding agent (google that if you're unsure of what to use!). Place it in the fridge for at least 30 minutes.
- Charge your canister using a charger. Read the instructions on your canister, but it's typically as simple as screwing the charger into the end of your canister. We do a double charge to make it creamier. Simply do this step twice.
- Shake, shake, shake!
- Pull the squeeze lever to start dispensing.
(Every recipe will change the consistency, so experiment. We only double charge for egg white toppings, but not whipped cream.)
