Description
The Clover Club is a classic cocktail that is spirit-forward with a delicious subtle sweetness. It’s made with only 4 ingredients & looks beautiful served in a coupe glass! (Perfect for hosting!)
Ingredients

- Gin – 2 oz
- Fresh Lemon Juice – 3/4 oz
- Raspberry Syrup – 1/2-3/4 oz (Homemade is best, store-bought is fine too.)
- 1 egg white (or sub aquafaba) – roughly 2 tbs
Instructions
- Add gin, lemon juice, syrup, and egg white to a cocktail shaker with NO ICE.
- Shake vigorously for 20 seconds to create foam.
- Add a handful of ice to the shaker & shake again for another 20 seconds.
- Strain using a Hawthorne strainer into a coupe glass. (Double straining through a fine-mesh sieve is optional, but recommended.)
- Garnish is not necessary, but you can add raspberries or lemon peel if preferred.

Notes
Fresh squeezed lemon juice is very important for flavor. Read post above for notes on liquor substitutes. Egg white can be subbed for aquafaba/chickpea juice.
