If you’re looking for the perfect easy side dish to balance out a rich main, this simple arugula salad recipe is a game-changer. It comes together in minutes with just a handful of ingredients—most of which you probably already have in your kitchen.
I love how versatile arugula is. It has a slightly peppery bite, but it plays so well with bright, fresh flavors. The beauty of this recipe is that it uses Parmesan cheese. I always have parm on hand, so no last-minute grocery runs necessary!
This post is about an arugula salad recipe.
Why You'll Love This Arugula Salad
Quick & Easy
It takes just 5 minutes to throw together which is perfect when you forget about planning a side!
Minimal Ingredients
Only 4 simple ingredients! All you need: arugula, lemon juice, olive oil, & parmesan.
Balanced & Delicious
The peppery flavor of the arugula mixed with the rich olive oil & salty parm makes for a 10/10 flavor combo!
Easy To Pair
It's a simple & light recipe which makes it great for pairing with a heavier dish (think pasta, steak, lobster roll, etc.).

How To Store & Prep Arugula:
Storing:
You'll want to store your arugula in the crisping drawer inside your fridge. It's good practice to wrap it in a dry paper towel (this will help pull excess moisture out) and keep it in a breathable bag/container.
Washing:
Only wash your arugula when you're ready to use it! Washing it & then storing it will make it go bad quicker. Make sure you use a salad spinner to get all the extra moisture out after washing.
Reviving:
If your arugula is looking not-so-great, soak it in ice water for 5-ish minutes. It perks the leaves right back up.

Arugula Salad Ingredients:
1. Fresh Arugula (4 cups)
Regular or baby arugula works just fine!
2. Freshly Grated Parmesan (1/4 cup)
Making sure your parmesan is freshly grated is going to make sure it has that "melt in your mouth" effect. Fresh parm is also going to give you that nutty flavor the salad needs.
3. Extra Virgin Olive Oil (2+ tablespoons)
Don't skip on quality here! When using minimal ingredients it's essential that your ingredients are quality. I love to use Graza Drizzle olive oil for this salad! Any quality EVOO will do!
4. Fresh Lemon Juice (1-2 tablespoons)
I use roughly a half lemon for this salad. If you love lemon (like me!) add more. If it's not your thing, go a little lighter on it. If you want to avoid seeds in your salad, I use a lemon squeezer for a quick lemon juice.

5. Salt & Pepper
Fresh cracked pepper is best here! For salt, I like a little crunch effect, so I usually add Maldon flakey salt. Regular sea salt is just fine too though!
Arugula Parmesan Salad Recipe:
1. In a large bowl, add the arugula.
2. Drizzle with olive oil and fresh lemon juice, tossing gently to coat the leaves.
3. Sprinkle with freshly grated Parmesan cheese and season with salt and pepper to taste.
4. Serve immediately and enjoy!

Arugula Salad Recipe Ideas & Variations:
1. Add nuts
Toss in some toasted pine nuts, walnuts, or almonds for extra crunch.
2. Use a different cheese
Goat cheese or feta are fantastic if you have them on hand.
3. Include fruit
Adding in a handful of sliced pears or apples adds a really nice touch of sweetness!
4. Make it a meal
Add grilled chicken or shrimp on top for a protein boost to make the salad your main!
5. Switch up the dressing
If you want something heartier, try a balsamic glaze or honey Dijon dressing.

Recommended Kitchen Tools & Ingredients:
Salad Spinner – Keeps your arugula crisp and fresh by removing excess moisture. I use ours ALL the time.
Quality Olive Oil – This one is from Graza & I love it. (Make sure you use the "Drizzle" for dressings & the "Sizzle" for cooking!
Microplane – If you take my advice on one this, let it be this. The microplane make the most thin meltable parmesan shavings. It's a tool we use all the time in our kitchen. Just make sure you're careful when using it!
Citrus Juicer – Saves an insane amount of time when cooking & making cocktails, we own 3.
